Perfectly Iced Fairy Cakes Made In Minutes!

Want a quick pretty treat that takes five minutes to pull together?

Irish Mammies have been baking Fairy Cakes for as long as I can remember and it’s no wonder!

They are child’s play to make, light and fluffy, topped with sweet smooth icing and adorned with pretty edible decorations.

I’ve yet to meet anyone who didn’t love these beauties.



Want perfectly iced cakes?

Bake the fairy cake mix in large paper cases so that when fully baked the cooked cake is still below the rim of the baking case leaving room to flood the top with icing. 

I’ve seen suggestions to cut off the peaks on the cakes after baking to allow for a perfectly iced top but using larger cases works far better and no cake is wasted. Happy days! 

I throw everything in the one bowl and just whisk with an electric mixer for a minute or two.

Trust me it works!

You’ll have light fluffy fairy cakes every single time without any fuss.

The easiest little cakes you will ever make


  • 125 grams butter (softened)
  • 125 grams caster sugar
  • 125 grams of self raising flour
  • 2 Medium eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoons milk
    For the icing
  • 1 packet of icing sugar (225g / 8oz)
  • 2-3tbsp warm water
  • Food colouring ( unless you are leaving your icing white)
  • Cake decorations (sprinkles, sweets/candies or any edible decorations of your choice


  1. Preheat oven 190c (180c Fan)
  2. Line muffin tins with cupcake papers. ( This mix makes 12 little cakes)
  3. Put all the ingredients in a bowl and mix until smooth. Do not over beat.
  4. Spoon into your prepared paper cases & bake for about 12 minutes until a golden brown ( ovens can vary so keep an eye you may need a minute more/less)
  5. Allow to cool
    For the icing
  1. Put the icing sugar in a bowl and gradually blend in the warm water until you have a thick pouring consistency.
  2. Use a teaspoon to spoon over the top of the fully cooled cakes and decorate with sprinkles or your edible decoration of choice.
  3. Put in the refrigerator to allow the icing to set.
